Sesame Rolls recipe

Ingredients:

5 oz of plain flour.
3 oz of shortening.
1 tablespoons of superfine sugar.
4 tablespoons of water.

2 ½ oz of plain flour.
2 oz of shortening.

16 oz of red bean paste or lotus paste.

1 egg, beaten, to glaze.
6 tablespoons of sesame seeds, to coat.

Preparation Instructions:

For the pastry, mix the 5 oz of plain flour, 3 oz of shortening, superfine sugar and knead till smooth.

Form into a ball and allow to rest for 15 minutes.

Mix the 2 ½ oz of plain flour and 2 oz of shortening until just combined. Form into a ball.

Wrap the second dough with the first dough, roll into quarter-inch thick and roll up like a Swiss roll.

Roll again into quarter-inch thick and roll up like a Swiss roll.

Allow to rest for 30 minutes.

Divide the red bean paste or lotus paste into 16 portions.

Roll the pastry into a rectangular shape (12 inches by 8 inches).

Divide each side into four and cut into 16 portions.

Arrange the paste on each pastry, brush the end with a little water and neatly roll up.

Glaze each of the rolls with beaten egg and coat with sesame seeds.

Arrange on baking tray and bake at 400°F for about 25 minutes or until golden brown.
